    Easy to make with just a few simple ingredients.

    • Almond Flour: Almond flour is a nutritious and protein-packed alternative to traditional flour that can add a nutty flavor and satisfying texture to protein bites.
    • Protein Powder: we used a low carb vanilla whey protein powder for these coffee bites.
    • Sugar Free Maple Syrup: Lakanto Maple Syrup was used for this recipe.
    • Coconut Oil: keep the coffee bites from drying out.
    • Vanilla Extract
    • Sweetener and Coffee: we used powdered sweetener and room-temperature coffee to make the glaze.

    Steps to make these coffee bites

    STEP 1: In a medium-sized bowl combine the almond flour, protein powder, sugar-free maple syrup, vanilla extract and coconut oil. Use your hand to smush everything together and roll it into about 10 balls. Place on a plate and set it aside.

    *Note: depending on the protein powder and almond flour used, you may need to add more liquid in order for the balls to form. Simply add 1 teaspoon of water at a time until you are able to shape them into balls.

    STEP 2: make the coffee glaze by whisking together the powdered sweetener with the coffee glaze in a small bowl.

    STEP 3: Dip each protein ball into the coffee glaze, try to get as much glaze around the bites as you can. Place back onto the plate and then chill in the refrigerator for an hour before consuming.

    You can use any remaining glaze for dipping the balls when consuming or use it as a coffee sweetener in your morning coffee.

    Here are 2 tips on making sugar free maple protein coffee energy bites:

    1. Use a high-quality protein powder: Choosing a protein powder that has a good taste and consistency can make a big difference in the final product. Look for a protein powder that is sugar-free and has a flavor that complements the other ingredients, such as vanilla or chocolate.
    2. Adjust the consistency with liquid or dry ingredients: Depending on the protein powder and other ingredients you use, the consistency of the dough may vary. If it seems too dry, add a teaspoon or two of liquid like almond milk or water. If it seems too wet, add a tablespoon of dry ingredients like almond flour or protein powder until it reaches the desired consistency for rolling into balls.

    Storage

    Here are the steps to store sugar-free no bake maple protein coffee bites

    1. Store in an airtight container: Place the bites in an airtight container. You can use a plastic container or a resealable plastic bag. Make sure to remove as much air as possible before sealing.
    2. Refrigerate or freeze: coffee bites can be stored in the refrigerator for up to a week, or in the freezer for up to a month. If you freeze them, let them thaw in the refrigerator overnight before eating.
    3. Layer with parchment paper: If you're storing multiple layers of bites in a container, separate each layer with parchment paper to prevent them from sticking together.

    • 1 cup almond flour
    • 1 scooop low carb vanilla protein powder
    • ¼ cup lakanto maple flavored syrup
    • 3 tablespoon coconut oil
    • ¼ teaspoon vanilla extract

    Coffee Glaze

    • ¾ cup powdered sweetener
    • ¼ cup coffee room temperature

    Instructions
     

    • Combine the coffee bite ingredients together in a medium sized bowl then use your hands to roll them into 10 balls. Place on a plate and set aside.
