How to make low carb french onion frittata?
STEP 1: In a large oven-safe skillet over low-medium heat, caramelize the onions in 1 tablespoon of unsalted butter and 2 tablespoons of olive oil, seasoned with salt, pepper, minced garlic, and dried thyme.
Continuously stir the onions until caramelized, about 15 minutes. Once caramelized, add the balsamic vinegar and Worcestershire sauce. Remove the onions from the skillet and set them aside on a plate.
STEP 2: In the same skillet over medium heat, add the frozen cauliflower rice. Cook until all the moisture is removed, stirring occasionally.
Once the cauliflower rice is dry, add dots of the remaining 1 tablespoon of butter and mix until well combined with the cauliflower rice. Press down the cauliflower rice with a wooden spoon to form the crust.
