Steps by step instructions
How to make the low carb swiss chicken casserole recipe?
- Step 1: Whisk together the cream of chicken sauce
- Step 2: Pour the sauce of shredded chicken
STEP 1:
In a medium-sized saucepan over medium heat, make the cream of chicken sauce by adding the cream cheese, chicken broth, onion powder, garlic powder, salt, pepper, and optional celery seed. Whisk until smooth and creamy.
STEP 2: Preheat the oven to 375°F. Grease a 9 x 13-inch casserole dish with butter, then place the shredded or chopped cooked chicken (I used a rotisserie chicken) evenly in the bottom. Pour the homemade cream of chicken sauce over the chicken.
- Step 3: Top with a layer of swiss cheese slices
- Step 4: Top with parmesan pork rind crumbs and bake.
STEP 3: Add a layer of Swiss cheese slices on top of the chicken and sauce.
STEP 4: In a medium bowl, combine the grated parmesan and pork rind crumbs with the melted butter. Sprinkle the mixture over the Swiss cheese slices, then bake at 375°F for 30 minutes, or until the top is crispy, golden brown, and bubbly.
* See the printable recipe card at the bottom of this post for a complete list of instructions and measurements.
Top Tip
Using a rotisserie chicken not only saves time but adds extra flavor to the dish. Be sure to spread the pork rind crumb topping evenly to get that perfect golden, crispy finish!

Recipe tips, variations and storage
Recipe Tips
- Even Layering: Make sure the chicken is spread evenly across the bottom of the dish to ensure every bite has chicken, sauce, and topping.
- Pork Rind Crumbs: Crush the pork rinds finely for a more even and crispy topping. You can also use pre-crushed pork rind crumbs for convenience.
- Swiss Cheese: If Swiss cheese is too strong, you can use a milder cheese like mozzarella or provolone.
Variations
- Cheese Swap: Try using a combination of Swiss and cheddar cheese for a sharper flavor.
- Add Vegetables: Mix in cooked low carb vegetables like broccoli, cauliflower, or spinach with the chicken for extra nutrients.
- Spice it Up: Add a pinch of cayenne pepper or red pepper flakes to the sauce for a little heat.
- Herbs: Add fresh or dried herbs like parsley, thyme, or rosemary to the sauce for added depth of flavor.
Storage
- Refrigerator: Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven at 350°F until warmed through, or use the microwave for a quicker option.
- Freezer: You can freeze this casserole after baking. Let it cool completely, then wrap tightly with plastic wrap and foil, or store in an airtight container. Freeze for up to 2 months. When ready to eat, thaw in the fridge overnight and bake at 350°F until heated through.
