    Only 6 ingredients to make the salad and then a few more for the creamy keto greek dressing.

    • The Keto Greek Salad: cucumber, red bell pepper, orange bell pepper, red onion, kalamata olives and feta cheese, tomatoes are optional.
    • The Creamy Keto Greek Salad Dressing: garlic, salt, black pepper, oregano, red wine vinegar, olive oil, greek yogurt and mayonnaise.

    Steps by step instructions

    How to make the Creamy Keto Greek Salad?

    STEP 1: First let's start by making the creamy keto greek salad dressing.

    Using a small mason jar or a medium-sized bowl, add the minced garlic, salt, pepper, oregano, red wine vinegar, olive oil, greek yogurt (use full fat with fewer carbs) and mayonnaise.

    Place the lid on the mason jar and shake well for about 30 seconds. If using a bowl whisk the ingredients together until well combined. Place the dressing in the fridge until we are ready to pour over the salad.

    STEP 2: Prepare the ingredients for the keto greek salad. I like to take out all the ingredients and have them ready for chopping and slicing.

    STEP 3: Peel and cut the cucumber into half moons. Cut off each end of the cucumber then cut the cucumber lengthwise and then cut into ½ inch half moons, and transfer to a large bowl. Depending on the type of cucumber you are using you may want to deseed it.

    • STEP 4: Cut the peppers into 1-inch chunks and then slice the red onion, and place in the large bowl.

    STEP 5: If using cherry tomatoes cut them in half and then cut the feta cheese into cubes and add them to the bowl along with the kalamata olives.

    STEP 6: Pour the low carb greek salad dressing over the ingredients in the bowl and toss gently to coat evenly. Serve immediately.

    Instructions
     

    Salad Dressing

    • Mix together the creamy keto greek salad dressing ingredients in a small mason jar or whisk in a bowl. Place in the fridge until we are ready to dress the salad.
      1 minced garlic clove, ⅛ teaspoon salt, ⅛ teaspoon black pepper, ¼ teaspoon oregano, 1 tablespoon red wine vinegar, 1 tablespoon extra virgin olive oil, 1 tablespoon full fat greek yogurt, 1 tablespoon mayonnaise

    Salad Ingredients

    • Trim and cut the cucumber and peppers into bite sized pieces and place into a large bowl.
      1 english cucumber, 1 medium red bell pepper, 1 medium orange or green bell pepper
    • Cut the red onion into slices and halve the cherry tomatoes (if using) and add on top of the vegetables in the bowl.
      ½ medium red onion
    • Cube the feta cheese and add to the bowl with the kalamata olives.
      ½ lb feta cheese, ½ cup kalamata olives
    • Pour the dressing over the salad and toss gently until coated evenly. Serve in the same bowl or transfer to a lage serving platter.
