Say hello to your new favorite keto-friendly salad! This creamy keto Greek salad is packed with fresh veggies and topped with a deliciously tangy dressing, all while keeping you on track with your low-carb goals.
Mix together the creamy keto greek salad dressing ingredients in a small mason jar or whisk in a bowl. Place in the fridge until we are ready to dress the salad.
1 minced garlic clove, ⅛ teaspoon salt, ⅛ teaspoon black pepper, ¼ teaspoon oregano, 1 tablespoon red wine vinegar, 1 tablespoon extra virgin olive oil, 1 tablespoon full fat greek yogurt, 1 tablespoon mayonnaise
Salad Ingredients
Trim and cut the cucumber and peppers into bite sized pieces and place into a large bowl.
1 english cucumber, 1 medium red bell pepper, 1 medium orange or green bell pepper
Cut the red onion into slices and halve the cherry tomatoes (if using) and add on top of the vegetables in the bowl.
½ medium red onion
Cube the feta cheese and add to the bowl with the kalamata olives.
½ lb feta cheese, ½ cup kalamata olives
Pour the dressing over the salad and toss gently until coated evenly. Serve in the same bowl or transfer to a lage serving platter. (see video)
