Steps by step instructions
How to make low carb pumpkin spice chai donuts?
STEP 1: Preheat your oven to 350ยฐF. In a large bowl, whisk together the dry ingredients until fully combined.
STEP 2: Add the wet ingredients and mix with a rubber spatula until the batter is smooth and no dry ingredients remain visible.
STEP 3: Transfer the donut batter to a piping bag or a freezer bag with the corner cut off. Pipe the batter evenly into a well-greased donut pan. I greased the pan with coconut oil, but melted butter or cooking spray works just as well.
Dab the tops of the donuts with a wet finger to flatten out the ridges.
STEP 4: Bake the donuts at 350ยฐF for 16-18 minutes, until a toothpick inserted comes out clean. Let the donuts cool in the pan for 10 minutes, then gently loosen them with a small rubber spatula and transfer to a cooling rack.
STEP 5: Once the donuts have cooled, brush them with melted butter. Then, combine the sweetener and pumpkin spice in a bowl and roll the donuts in the mixture until they are fully coated.
Top Tip
Since these donuts are made with almond flour and wonโt rise much, itโs perfectly fine to fill the molds slightly above the rim for a fuller shape.
Make your own chai masala
Combine the following spices:
- 2 teaspoons ground cinnamon
- 1 teaspoon ground cardamom
- 1 teaspoon ground ginger
- ยฝ teaspoon ground cloves
- ยฝ teaspoon ground black pepper
- ยผ teaspoon ground nutmeg
Mix these spices together and store in an airtight container. Adjust the quantities to suit your taste preferences if needed.
Recipe tips, variations and storage
Recipe Tips:
- Ensure the donut pan is well-greased to prevent sticking.
- For extra flavor, add a pinch of salt to the dry ingredients.
- For an extra boost of chai flavor, mix a bit of the masala chai spice into the sweetener coating mixture before rolling the donuts. This adds an additional layer of chai spiciness to the exterior.โ
Variations:
- Swap pumpkin pie spice for apple pie spice for a different twist.
- Add chopped nuts or sugar-free chocolate chips to the batter for added texture.
Storage:
- Store donuts in an airtight container at room temperature for up to 3 days.
- For longer storage, freeze in a single layer, then transfer to a zip-top bag for up to 3 months. Reheat in a toaster oven for freshness.
