Steps by step instructions
How to make a low carb Reuben pizza?
STEP 1: Make the pizza crust.
Preheat oven to 350°F.
For the crust, use a large mixing bowl and mix together the 4 ounces of shredded mozzarella, 4 ounces of shredded marbled cheese, eggs, garlic powder and caraway seeds. Mix together with a rubber spatula until well combined.
Transfer the pizza dough mixture onto a parchment-lined 10" pizza pan. Place another piece of parchment on top and use a tumbler or rolling pin to spread out the pizza dough in the pan. Gently remove the top layer of parchment paper from the pizza dough.
Bake the pizza crust in the oven at 350°F for 15 minutes.
Remove the cooked pizza crust from the oven and place a layer of parchment paper on top and gently flip the pizza, then slide it back onto the pizza pan. Flipping it will allow us to cook the other side of the pizza once we add the toppings in Step 3. Check out the recipe video in the Zero Carb Crust recipe to see exactly how I did it.
STEP 2: Make the Russian Dressing
In a medium-sized bowl combine the mayonnaise, sugar-free ketchup, finely diced white onion, Worcestershire sauce, horse radish, hot sauce and paprika with a spoon.
STEP 3: Top the pizza with the Russian dressing first, then the corned beef, sauerkraut and the shredded Swiss cheese.
- STEP 4: Place the pizza back in the oven and bake at 350°F for 15 minutes once again and then broil for 3-5 minutes until the toppings are nice and bubbly.
- Remove the pizza from the oven and allow it to slightly cool before cutting it into slices and serving. Garnish with chopped parsley (optional).
