Steps by step instructions
How to make corned beef fritters?
STEP 1: In a large bowl combine the corned beef with the almond flour, egg, paprika, onion powder, garlic powder, black pepper and baking powder. Mix until all ingredients are fully combined.
You could use a food processor for this step but I find it quicker to simply mix in the bowl.
STEP 2: Heat up a large frying pan over medium heat and add two tablespoons of oil, I prefer to use olive oil rather than vegetable oil.
Place around 1.5 tablespoons of the corned beef mixture into the frying pan and flatten each fritter to about 2 inches in diameter. Repeat this process until the pan is full, but make sure not to overcrowd it. You may need to cook the fritters in two batches, depending on the size of your pan.
Fry each fritter for 3-5 minutes on each side until they are golden brown. Transfer the cooked corned beef from the pan and place them on a plate lined with paper towels to soak up any excess grease.
If wanting to make these in the air fryer I suggest using tinfoil to cover the air fryer basket as the fritter mixture might seep through the basket if it's too wet.
STEP 3: If using, make the Russian dressing dip by mixing all the ingredients in a small bowl until combined. Serve the corned beef fritters with the dipping sauce and a side of sauerkraut.

Recipe tips
Here are two tips to make the best-ever corned beef fritters:
- Make sure to drain the excess liquid if using canned corned beef before mixing it with the other ingredients. This will help prevent the fritters from being too moist and falling apart during cooking.
- To ensure the fritters hold together well during frying, use a spatula to gently press down on each fritter as it cooks. This will help it form a crispy exterior and hold its shape.
- Don't overcrowd the pan when frying the fritters. This will help ensure they cook evenly and develop a crispy exterior.
- To add more flavor to the fritters, mix in chopped onions, garlic, or other seasonings of your choice.
- If you're looking to reduce the fat content of the fritters, you can use a non-stick pan or spray the pan with cooking spray instead of using oil.
- For a thicker, denser fritter, you can add an additional egg to the mixture.
- If you want to make the fritters even more low-carb, you can omit the almond flour and replace it with additional corned beef or a low-carb flour alternative like coconut flour. Just note that the texture may be slightly different.
Storage
To store the corned beef fritters in the fridge, allow them to cool to room temperature, then place them in an airtight container lined with paper towels to absorb any moisture. They should keep well in the fridge for up to 3-4 days.
To store the fritters in the freezer, place them in a single layer on a baking sheet lined with parchment paper, and freeze until solid. Once frozen, transfer the fritters to an airtight container or freezer bag, and label them with the date.
They can be stored in the freezer for up to 2-3 months. When ready to eat, simply reheat the fritters in the oven at 350°F on a baking sheet or on the stovetop in a frying pan until heated through.

Here are five variations on this corned beef fritter recipe:
