    Keto Air Fryer Pizza

    This Keto Air Fryer Pizza recipe is topped with fresh mozzarella, pepperoni and a low carb tomato sauce. Simply made with a twist on a fathead dough in the air fryer without using a pan, only 2g net carbs and made in under 10 minutes.

    Most air fryer pizza recipes trick you into using the air fryer with a pan to cook the pizza which defeats the purpose of using an air fryer, might as well throw it in the oven. The method I use allows the air fryer to work it's magic and get that dough nice and crispy.

    🥘 Ingredient notes

    Made with a classic low carb fathead dough with a pinch of xanthan gum this keto air fryer pizza recipe has the classic toppings like mozzarella, pepperoni and sauce.

    • Almond Flour: ground blanched almonds were used for this recipe which gives it a slightly nutty flavour plus it's low carb and gluten free.
    • Cream cheese: for that mild sweet taste and pleasant tang helps the dough keep together
    • Mozzarella: there are many different types of cheeses that I have tried but for me, mozzarella gives the best pull.
    • Oregano: because pizza without this herb just isn't pizza
    • Xanthan Gum: a great low carb stabilizer to prevent the ingredients from separating

    How to make Keto Air Fry Pizza?

    STEP 1: To a medium bowl add the almond flour, 1.5 cups of mozzarella and the cream cheese. Gently mix with a fork. Microwave on high for 1 minute. Mix and microwave again for another minute.

    STEP 2: remove from microwave and add 1 egg, the oregano, salt and pepper and a pinch of xanthan gum. Mix with a fork until well combined.

    STEP 3: Using your hands roll the dough into a ball and then divide into 2 balls. Place them in the fridge for 10 minutes.

    • STEP 4: Preheat air fryer to 400°F and spray the basket with a nonstick spray. After 10 minutes remove the dough from fridge, divide the dough into 5 balls. Flatten each ball with your hands to form mini pizzas about 2.5 inches wide and ½ inch thick. Then spray bottoms of pizzas with nonstick cooking spray and place into air fryer basket. No more than 2 at a time.

    STEP 5: Top with your favourite low carb sauce, pepperoni and mozzarella.

    STEP 6: Air fry at 400°F for 6 minutes, allow to cool in the air fryer for 2 minutes and then place on cooling rack. To avoid any accidents use a metal spatula to remove pizzas from Air Fryer basket.

    📋 Substitutions and Variations

    Pizza can be topped with so many ingredients, here are some other ways I have made these mini keto air fryer pizzas.

    • Sauce - Use a pesto or alfredo sauce instead of a tomato sauce.
    • Cheese - Provolone or a fontina cheese would go well on this pizza. Get creative and use your preferred cheese.
    • Vegetarian - make it a veggie pizza and skip the pepperoni and top it with some diced bell peppers and sliced red onions instead.

    👨🏻‍🍳 Top tips

    Generously spray the bottoms of the mini keto air fryer pizza with nonstick spray otherwise they will likely stick to the bottom of the air fryer basket.

    Only place 2 mini pizzas in the air fryer at a time to allow them to cook properly.

    Place pepperoni under the mozzarella to avoid them from flying around in the air fryer while cooking.

    ⏲️ Tips and serving suggestions

    • Serving: pizza goes well with a salad like my panzanella salad full of tomatoes and fresh mozzarella.

    Storage: The best way is to stack on a plate with parchment paper in between each pizza and then a plastic wrap the whole thing. Store in the fridge for up to 3 days. Warm them up in the microwave for 1 minute.

    • Sauce: Keep it low carb and use a low carb sauce like Roa's tomato sauce with only 2g net carbs per serving.

    💭 Frequently asked questions

    What if my dough is too sticky?

    Add some almond flour to it and knead it, keep adding a little at a time until it is no longer stick and you are able to roll it with your hands.

    What does fathead dough taste like?

    If made correctly it has the same taste and texture of regular pizza.

    Can you reheat fathead dough pizza?

    Reheat in the microwave tends to work best. Just a minute should do the trick.

    How many carbs per mini pizza?

    Each mini pizza is only 2g net carbs.

    Instructions

      Sorry but I am confused - the recipe says it is for 5 people but then it says you make 2 pizzas 2.5 inches wide? How do 2 pizzas that are 2.5 inches wide feed 5 people???

        Hi Brenda. I do say to divide the dough into 2 balls before placing them in the fridge but I also mention to divide them into 5 balls later on. Please see Step 5 in the recipe card. Hope that helps, let me know if you have any more questions.

        Try lowering the temp to 375°F next time. Use regular, full-fat mozzarella.
