Ingredients Needed
Coconut Milk: just one can of coconut milk is used to give this dairy free ice cream a coconut flavor.
Diary Free Vanilla Protein Powder: I love using Transparent Labs Vegan Protein Powder for this recipe as it does not leave a gritty protein texture and mixes really well. Click the link to receive 10% off your order.
Vanilla Extract: adds a subtle vanilla flavor to the recipe
Coconut Extract: give it that intense coconut flavor without being too overpowering.
Guar Gum: supports a creamy texture and is less icy than traditional dairy free ice cream recipes.
Nut Milk: to round out the coconut milk, we used unsweetened vanilla almond milk.

Instructions
- Mix it up: In a blender or bowl, combine all ingredients until smooth and fully combined.
- Pour into Creami pint: Pour the mixture into a Ninja Creami pint container. Make sure not to exceed the max fill line. Freeze for 24 hours.
- Creamify it: Remove the pint from the freezer and place it into the Ninja Creami machine. Install the outer bowl and lid, then select the “Lite Ice Cream” setting.

Recipe Tips
- Use full fat coconut milk for the creamiest texture.

- Toasted Coconut Swirl - Fold in toasted unsweetened coconut flakes and some coconut cream for extra richness.
