This ice cream uses a traditional vanilla ice cream base that I use for many of my ninja creami recipes that include:
- Almond Milk: you can use your favorite milk or nut milk but we love to use unsweetened vanilla almond milk for this recipe.
- Vanilla Protein Powder: we used a low carb vanilla protein powder that adds a creamy texture and enhances the flavor of the ice cream, making it even more delicious and enjoyable to eat
- Vanilla Extract: enhances all the flavors
- Sweetener: we use a ¼ cup brown sugar sweetener, we used erythritol but feel free to use your favorite sweetener.
- Cream Cheese: slightly tangy and gives a rich creaminess to the ice cream.
To make it a carrot cake flavor we add the following ingredients:
- Cinnamon, ground nutmeg, ground ginger, chopped pecans and shredded carrots

Steps by step instructions
How to make the carrot cake ice cream
STEP 1: In a blender mix together all the ingredients except the chopped pecans and the shredded carrots. Blend on high for about 30 seconds, then pour into the ninja creami pint and freeze for 24 hours.
STEP 2: after 24 hours remove the pint from the freezer, remove the lid and place it in the ninja creami outer container. Lock on the blade lid and run it through the machine using the "smoothie bowl" option on the ice cream maker.
STEP 3: with a butter knife create a 1" well down the centre of the ice cream and add in the chopped pecans and the shredded carrot. Place it back in the ninja creami ice cream maker and use the "mix in" button.
Once the spinning cycle is complete it will be ready for serving.
