Ingredients needed
- Plain Greek Yogurt: Giving this ice cream that extra protein. We used a 0% greek yogurt for this recipe.
- Low Carb Protein Powder: Choose a protein powder with minimal sugar to keep the carbs low. I like to use Prime Protein Vanilla Powder. See recipe card for discount.
- Sugar Free Banana Pudding Mix: I enjoy using Simply Desserts pudding as it has cleaner ingredients than the traditional Jello pudding mix. Plus, it helps keep the ice cream extra creamy.
- Banana Extract: intensifies the banana flavor without adding any extra sugar or carbs.
- Sugar Free Chocoalte Chips and Coconut Oil: The coconut oil helps keep the chocolate soft and smooth when frozen, preventing it from hardening.

Recipe Tips
- Don't skip melting the chocolate chips with the coconut oil, this helps to prevent the chocolate from becoming too hard after freezing and keeps its chocolatey flavor.
- Add more water if the mixture is too thick after blending.
How to use a banana for a natural flavor boost?
- Replace the sugar-free banana pudding mix with ½ of a ripe banana, mashed - This will add natural sweetness and real banana flavor to this protein ice cream recipe.
- Reduce or omit the banana extract - Since fresh banana is being used, the extract may not be necessary or can be reduced to ⅛ of a teaspoon.
- Slightly reduce the water - Since banana adds moisture, reduce the water to 1 cup instead of 1 ¼ cups.
- Optional: Add 1-2 teaspoons of a low-carb sweetener (like allulose or monk fruit) if more sweetness is needed.
Recipe Variations
- Chocolate Lover: add a tablespoon of unsweetened cocoa powder or chocolate protein powder for that extra chocolate flavor. (please note it will lose its yellow color)
- Peanut Butter Chunky Monkey: add a tablespoon of peanut butter for a rich nutty flavor.
- Coffee Chunky Monkey: add a teaspoon of instant espresso powder for a high protein coffee kick.

Storage
- After Mixing: If you have leftovers, smooth the ice cream evenly in the Ninja Creami pint container and cover it with the lid.
- Freezing Again: Store it in the freezer for up to 1-2 weeks for the best texture. If it hardens, re-spin it in the Ninja Creami using the Lite Ice Cream setting to restore creaminess.
- Quick Serve Tip: Let the pint sit at room temperature for 5-10 minutes before scooping if you don't want to re-spin.
Frequently Asked Questions
Re-spin the ice cream in the Ninja Creami after the first spin. If it's still crumbly, add 1-2 tablespoons of liquid (like almond milk or cream) and spin again.
Yes, but the texture may be less creamy, and you might need to add a sweetener since the protein powder contributes some sweetness.
Food safety
- Don't leave food sitting out at room temperature for extended periods
