    A sugar free Keto Corn Syrup is used as a stabilizer in low carb recipes like ice creams, cakes, pies, and a variety of other desserts. Use this recipe for my Low Carb Sugar Free Strawberry Ice Cream Popsicles.

    Why use Keto Corn Syrup in recipes?

    We use keto corn syrup to inhibit the formation of larger sugar crystals. It's also great for making pancake syrup, gummies, or caramel.

    It often can be used to replace high fructose corn syrup in recipes. It can be made with light corn syrup like this recipe or darker by simmering over medium heat and or using brown erythritol. It also has zero net carbs per tablespoon.

    • Hot Water: no need to simmer in a pot, simply use hot water to make this quick keto corn syrup recipe.
    • Sweetener: we used erythritol granulated sweetener for this recipe but allulose would work better as it does tend to dissolve better than erythritol.
    • Xanthan Gum: acts as a stabilizer and a thicker to give this recipe that syrupy texture.
    • Vanilla Extract: adding some vanilla flavor to this recipe.

    How to make keto corn syrup?

    STEP 1: boil water in a kettle and add it to a large bowl. Sprinkle in the sweetener and whisk until dissolved.

    STEP 2: whisk in the teaspoon vanilla extract and then slowly sprinkle in the xanthan gum a little bit at a time. Continue to whisk while adding the xanthan gum.

    STEP 3: strain the corn syrup keto into a jar and use it as needed.

    Recipe tips

    This keto friendly corn syrup substitute is a quick and easy way to create an alternative when a recipe asks for corny syrup. Especially in pecan pies or butter tarts which I plan to update my recipes with this corn syrup.

    Tips: sprinkle in the xanthan gum a little at a time while whisking to avoid any clumps. Use a strainer in the last step to remove any xantham gum that became clumpy.

    • Storage: the sugar free corn syrup is best used right away as it may crystalize again depending on the sweetener used. I stored mine in the fridge and used it within 4 days.

    Frequently asked questions

    Is there any other keto corn syrup alternative?

    The only other alternative I can think of is using a sugar free maple syrup. I have used Lakanto Maple Syrup I purchased on Amazon.
