add hot water to a large bowl and mix in the sweetener with a whisk until dissolved.
whisk in the vanilla extract and then slowly add the xanthan gum while continuing to whisk.
strain the keto corn syrup into a jar and use as needed. (Don't forget to watch the video before making this recipe)

Notes
the keto corn syrup is best used right away as it may crystalize again depending on the sweetener used. I stored mine in the fridge and used it within 4 days.
