This Keto Risotto with Lemon and Parmesan is one of my favorite ways to make cauliflower rice. It's a quick and simple creamy side dish that goes well with chicken, steak, and roast. I can also eat it on its own, and I am very happy.

Ingredients used
Cauliflower Rice: I use frozen cauliflower rice simply for the convenience. It is much easier for me to pop a bag of cauli rice out of the freezer whenever I am in the mood.
Cream Cheese: gives it that bit of tangy flavor while making it luscious and smooth. I always add cream cheese to any of my cheesy cauli-rice dishes.
Parmesan: The king of cheese. Parmesan adds that salty, nutty and fruity flavour that you just can't get from many other cheeses.
Lemon: Giving this keto risotto a hint of zesty lemon and brightness.

Keto Risotto with Lemon

Equipment
Ingredients
- 2 cups Cauliflower Rice
- 2 tablespoon Cream Cheese
- ¼ cups Heavy Whipping Cream 35%
- ¼ cup Grated Parmesan
- 1 dash Salt
- 1 dash pepper
- 1 tablespoon Lemon Rind/Zest
Instructions
- Heat a dry medium frying pan over medium heat. Add cauliflower rice and cook for 10 minutes, stirring occasionally, until dry.
- Make a well in the center and add cream cheese. Spread it around to warm, then push the rice on top.
- Pour heavy cream around the edges of the rice. Season with salt, pepper, and lemon zest.
- Stir until the cream cheese melts and everything is well combined.
- Add parmesan, stir again, and serve.
- Garnish with lemon zest, chopped parsley, and extra parmesan. Enjoy!

Another winner! I used a full bag of frozen cauliflower rice, which ends up making about 3 cups of cooked rice, so I did 1 1/2 times the other ingredients. I used dried lemon zest, which I was led to believe works just like fresh zest. Well, it was okay, but fresh would have been better.

I added basil instead of parsley cause I didn’t have it and this is the best cauliflower risotto recipe I’ve tried. I Put a lemon brown butter halibut with it. Restaurant quality!
