    This is one of my favourite ways to make cauliflower rice. I use frozen because who has time for all that chopping and blending?

    Keto Lemon Risotto with Cream Cheese and Parmesan is a quick and simple creamy side dish. It goes well with chicken, steak and a roast. Actually, I can eat this on it's own and I am very happy.

    Now I know the italian purists are going to say that's not risotto, where is the rice? Well, as much as I would love to eat risotto made with arborio rice, I have type 2 diabetes and I manage it without medications.

    This requires me to modify what I eat so i don't get as many blood sugar spikes. So I figure out ways to eat what I love with some modifications.

    Keto Lemon Risotto this recipe

    Traditional Risotto

    Can you believe growing up in an Italian family my mom never made risotto? It's actually more of a northern italian dish and our family is from the south, so this was not something they typically ate.

    We were definitely missing out but I have made up for it over the years.

    Traditional risotto is creamy but it mostly comes from the starchy rice. Sauteed with butter and onions and various other ingredients.

    It requires a lot of attention and regularly adding a ladle of stock to allow the rice to slowly soak up the flavours.

    Risotto in Italy is normally a first course served before the main course, but risotto alla milanese is often served with ossobuco alla milanese as a main course

    Ingredients for the Keto Lemon Risotto

    Cauliflower Rice

    I use the frozen cauliflower rice simply for the convenience. It is much easier for me to pop a bag of cauli rice out of the freezer whenever I am in the mood.

    I can't tell you how many fresh heads of cauliflower have gone to waste because I forgot about it in the fridge after using half of it a week ago. If you want to use fresh cauliflower for this recipe, know yourself out.

    Cream Cheese

    Oh my, need I say more? Cream cheese give it that bit of sour taste while making it luscious and smooth. I always add cream cheese to any of my cheesy cauli-rice dishes.

    Parmesan

    The king of cheese. Parm adds that salty, nutty and fruity flavour that you just can't get from many other cheeses.

    Lemon

    The star of the show. I used to make this dish without the lemon but one day I realized I had lemons sitting on the counter and needed to use them.

    So I grated some into this dish and I was floored. This was a game changer for me and I never looked back. Lemon just hightens all the flavours and gives it that freshness to it that can't me replicated.

    Equipment

    • Frying Pan

    Ingredients
      

    • 2 cups Cauliflower Rice
    • 2 tablespoon Cream Cheese
    • ¼ cups Heavy Whipping Cream 35%
    • ¼ cup Grated Parmesan
    • 1 dash Salt
    • 1 dash pepper
    • 1 tablespoon Lemon Rind/Zest

    Instructions
     

    • with stove on medium heat, add 2 cups of fresh or frozen cauliflower rice to a dry medium frying pan
    • stir occasionally, about 10 minutes until rice is dry
    • make well in centre of pan and add cream cheese
    • spread cream cheese around the centre to warm it up, then push the rice to the centre on top of cream cheese
    • add heavy cream around the outside of the rice
    • add a dash of salt and pepper
    • add zest of 1 lemon
    • stir until combined and cream cheese has melted
    • add parmesan and stir one more time to combine

    Garnish

    • lemon zest
    • chopped parsley
    • dusting of grated parmesan

      I added basil instead of parsley cause I didn’t have it and this is the best cauliflower risotto recipe I’ve tried. I Put a lemon brown butter halibut with it. Restaurant quality!
