Instructions
Heat a dry medium frying pan over medium heat. Add cauliflower rice and cook for 10 minutes, stirring occasionally, until dry.
Make a well in the center and add cream cheese. Spread it around to warm, then push the rice on top.
Pour heavy cream around the edges of the rice. Season with salt, pepper, and lemon zest.
Stir until the cream cheese melts and everything is well combined.
Add parmesan, stir again, and serve.
Garnish with lemon zest, chopped parsley, and extra parmesan. Enjoy!
