How to make low carb butterscotch apple cookies?
STEP 1: Preheat the oven to 350F. In a large bowl whisk together the dry ingredients, except the cinnamon.
STEP 2: Peel and dice one apple and puree it in a blender with the unsalted melted butter and cinnamon. Add it to the dry ingredients with the two egg whites and mix to combine with a rubber spatula.
- Step 1: Preheat oven and mix dry ingredients.
- Step 2: Dice apple and mix wet ingredients into dry.
STEP 3: Fold in the sugar-free white chocolate chips.
STEP 4: Using an ice cream scoop, scoop out about 2.5 tablespoon of cookie dough and place on a parchment-lined baking sheet.
- Step 3: Add the chocolate chips.
- Step 4: Scoop onto baking sheet.
STEP 5: Using a spatula knife, flatted each cookie to about a ¼ inch thick. We need to do this as the cookies will not spread on their own.
STEP 6: Top with more white chocolate chips if desired and bake at 350F for about 15-18 minutes or until the edges are golden brown. Allow to slightly cool and then transfer them to a wire rack and cool completely before consuming.
- Step 5: Flatten the cookies.

Top Tip
When using pudding mix in cookies, the center may sometimes appear softer and look slightly undercooked even when the cookies are fully baked.
This is due to the added moisture and binding properties of the pudding mix, which gives the cookies a soft and chewy texture. To ensure they are done, check the edges—they should be set and lightly golden. The center may firm up as the cookies cool.

- 1 medium apple peeled and diced
- 1 tablespoon melted unsalted butter
- ½ cup sugar free white chocolate chips
Instructions
- Preheat oven to 350°F. In a large bowl, whisk together all dry ingredients (except cinnamon).2 ¼ cups almond flour, ½ cup brown sweetener, ¼ teaspoon salt, 2 tablespoon simply delish butterscotch pudding

- Add extra white chocolate chips on top if desired. Bake for 15-18 minutes until the edges are golden. Allow to slightly cool on the baking tray before transferring to a cooling rack.
