Low Carb Butterscotch Apple Cookies are a diabetic-friendly dessert made with almond flour, 1 medium apple, sugar-free white chocolate chips, and butterscotch flavor.
Preheat oven to 350°F. In a large bowl, whisk together all dry ingredients (except cinnamon).
2 ¼ cups almond flour, ½ cup brown sweetener, ¼ teaspoon salt, 2 tablespoon simply desserts butterscotch pudding
Peel and dice the apple. Blend it with melted butter and cinnamon, then add to the dry ingredients with the egg whites. Mix using a rubber spatula.

Fold in the sugar-free white chocolate chips.

Scoop 2.5 tablespoons of dough onto a parchment-lined baking sheet.
Flatten each cookie to ¼ inch thick with a spatula since they won’t spread.
Add extra white chocolate chips on top if desired. Bake for 15-18 minutes until the edges are golden. Allow to slightly cool on the baking tray before transferring to a cooling rack.
