- Low Carb: The ingredients were carefully selected to keep the carbs as low as possible without compromising flavor or impacting my blood sugar levels.

- Meal Prep: I like to individually wrap each portion and quickly heat it up in the microwave or air fryer in the mornings or take it with me on the go.

Ingredients needed
This low carb frittata recipe with sausage is made with just a few simple ingredients.
- Eggs: We used large eggs for this recipe and whisked them to make this frittata light and fluffy.
- Italian Sausage: alternatively use ground turkey or chicken but add additional spices like paprika, fennel seed and cayenne pepper.
- Grated Cheese: use your favorite cheese, I used a white cheddar but you can use any melty cheese like mozzarella, provolone, cheddar or fontina.
- Chopped Kale: fresh or frozen, its slightly earthy flavor compliments the richness of the eggs and cheese. You can also use fresh or frozen spinach.
- Cream: I used a 10% cream to add a smoother custard-like texture to the frittata.
- Onion, garlic, oregano, salt and pepper
- Butter for greasing the casserole dish.

Steps by step instructions

How to make a low carb baked frittata?
STEP 1: In a large skillet over medium heat, brown the ground sausage and then add the diced onion and minced garlic. Cook until tender, add in the chopped kale until warmed through, then set aside.
STEP 2: In a large bowl whisk together the eggs, black pepper, salt and cream. Then add the shredded cheddar cheese and mix.

- Step 1: Brown sausage with onion, garlic and kale.

- Step 2: Whisk together the egg mixture.
STEP 3: Preheat oven to 350°F. Generously grease a 9" x 13" casserole dish with butter and then evenly add the sausage mixture to the dish.
STEP 4: Evenly distribute the egg mixture over the sausage mixture. If you see any clumps of cheese use a fork to spread it throughout the baking dish.

- Step 3: Butter the casserole dish and add the sausage mixture.

- Step 4: Top with egg mixture.
STEP 5: Bake the frittata in the preheated oven at 350°F for 30 minutes or when the centre is set, then remove from oven and allow to set and slightly cool before cutting into slices.
STEP 6: Optional - Top with more shredded cheese and broil in the oven just until golden and bubbly (about 3 minutes).

Important Step
Be very liberal with buttering the casserole dish and make sure it gets in every nook and cranny. This will ensure the frittata does not stick to the baking dish.
Recipe Tips and Suggestions
Important tips to help make this the best low-carb frittata with sausage.
- Make sure the onions are softened with the sausage mixture, you don't want crunchy onions in your frittata.
- For a creamier texture opt for full fat cheese, try not to use light, low fat or skinny cheese.
- To keep the baked frittata moist and tender make sure not to overbake it and remove from the oven just as the centre is set and no longer jiggly, about 30 minutes.
- It's best to thaw and strain the frozen kale before adding it to the mixture
Variations
- Make it vegetarian and leave out the meat. Add additional veggies like spinach, mushrooms and bell peppers for a different mix of flavors.
- Make a meat lover frittata and add cooked bacon, and pepperoni slices and browned ground beef.
- Use a blend of cheeses like shredded mozzarella, cheddar and grated parmesan for a cheesy twist.

What to serve with frittata?

Storage and reheating
- Allow the low carb frittata to cool completely then store in an airtight container in the fridge for up to 4 days. I do not recommend freezing the frittata.
- To reheat: microwave the frittata for 1-2 m minutes or until warmed through or place it on the stovetop on a non-stick skillet on low heat until warm.
- Air fry the frittata for 5 minutes at 400°F for a crispy golden top and perfectly cooked interior.

Once the low carb frittata has cooled, cut into individual portions and wrap each portion in parchment paper or tin foil, store in an airtight container in the fridge. When you are ready to enjoy it, remove from the wrapping and warm up in the microwave.
