These crispy chicken skin egg rolls are a great Keto or Low Carb option for those of you who love egg rolls but don’t want the extra carbs from the egg roll wrap.
Most people in the keto low carb world are familiar with the Crack Slaw or Egg Roll in a Bowl recipe. My favourite is from Keto Connect found here.
The only change to my recipe is I add 2 tablespoons of natural peanut butter.
I was able to ask my chef friend to get me some chicken skins from the butcher. They actually gave her the skins for free. All I did was place about a tablespoon of the “crack slaw” on a chicken skin, wrap it up, sprinkle with salt and pepper and fry it up in a pan with some olive oil. You can also fry up the chicken skin on their own like pork rinds or bake them on a cookie sheet and make crispy chicken skin chips.
