Yes in Week 2 of this carnivore experiment I made a deep dish pizza, primarily made with eggs, mayo, cheese, meat, pork rinds and sauce. Now I know the hardcore carnivores are saying thats not carnivore but let's just say I am doing a 99.9% carnivore diet.

Although the definition of carnivore is "A carnivore, meaning "meat eater", is an organism that derives its energy and nutrient requirements from a diet consisting mainly or exclusively of animal tissue".

    Week 2 of 12

I am still following the same eating, gym and exercise schedule.

This schedule has been really easy to follow for me and I love the fact that it allows me to eat dinner at home every night except one where I am fasting.

Dinner is an important time of day for me because it allows me to cook, which I love doing and spending time at the dinner table with my partner which I also love to do. I do mostly fast until lunch time but there are two longer fasts.

One is where I fast from after dinner on Tuesday until dinner on Wednesday. I then do a longer fast where I go from lunch on Thursday until dinner on Friday.

This schedule works for me, keeps me consistent and provides me with a sense of accomplishment if I stick to it each week.

Plus I love being able to share this with my family and co-workers so they know my weekly plan and don't pressure me into eating on the days I am fasting.

    Blood Sugars Carnivore Experiment

Still the same this week, waking up in the morning my blood glucose is still hovering around 8.1 mmol/L, see my post in week 1 about the Dawn Phenomenon. However, 1 hour after lunch I am seeing numbers in the 5.7 to 6.2 range.

Im still hoping to lower these numbers as I continue to eat this way. Again, this is an experiment. If I don't see better improvement in the 12 weeks, I plan to go back to a ketogenic diet again.

    Eating

This week I continued eating ground beef and bacon for my lunches. I also had more steak, wings, eggs, bacon and burgers. I did make a deep dish pizza where I simply mixed 2 eggs with 2 tablespoon of mayo, then added about 1 cup of crushed pork rinds, add oregano and mix well.

Pour it onto a parchment lined backing sheet, top it with a layer of ground beef, then add a layer of sauce, top with mozzarella, parm and bacon bits. Bake at 400 for 30 minutes. It was oh so good and don't want pizza any other way.

If you follow me on instagram @ihackeddiabetes there is a video of me making this pizza in my highlights. One day I will post the full recipe with instructions to this website. In the meantime, check out my sweet and spicy pork belly recipe.

    Pooping

Still the same, in fact one evening I felt kind of off digestively and had to make a run to the toilet several times. Not sure if it's something I ate or just the way of eating. I also had a night where I felt like I was going to vomit and it kept me awake for a couple of hours.

I think I may have eaten way more than I should have and it made me feel sick, I will limit my meals to 5 oz of protein per meal although some days I would love to eat more.

They say you don't have to count calories or track on a carnivore diet but I do believe diabetics should be more cautious of the amount of protein they eat at every meal due to gluconeogenesis.

    Weight-loss

Carnivore Experiment - Although weight-loss is not my focus my main focus, I chose to weight myself every Monday morning because I am often asked if I am losing any weight on this way of eating. This Monday I was down 1.5 lbs, so in total I am down 6 lbs in two weeks.

Catch you all next Monday for further Week 3 Updates, plus I will share what I have been eating for every day of the week.
