- STEP 2: Blend the strawberries and lemon juice until smooth then add to the dry ingredients, along with the egg whites and lemon zest. Mix together with a rubber spatula until well combined. Then add the strawberry pudding and mix again until combined.

- STEP 3: Using a cookie scoop and your hands, roll the cookie dough into balls, about 1 inch.
- STEP 4: Then roll each cookie dough ball into a bowl with the powdered sweetener.

- Step 4: Roll in the powdered sweetener.
- STEP 5: Place each powdered cookie dough ball onto a parchment lined cookie tray.
- STEP 6: Flatten each powdered cookie dough ball with a spatula knife or spatula to about ยผ inch thick.
- Step 5: Remove and add to serving plate

Instructions
