I have been doing a Carnivore Experiment and committed to eating carnivore for 12 weeks. While I have been enjoying it, I have been missing noodles lately so I have been inspired by seeing several people posting about Carnivore Noodles on Instagram lately and decided to play around and come up with my own recipe.

Carnivore Noodles
Ingredients I used to make 2 servings were:
- 3 eggs
- 2.5 oz softened cream cheese
- ¼ cup ground pork rinds
- ¼ cup grated parmesan
- 1 teaspoon of pesto sauce
I mixed all ingredients in a bowl and then poured it on to a baking sheet lined with parchment paper. Spread it thin onto the baking sheet and then baked it at 350 for 7-8 minutes.
Once out of the oven I placed the sheet of noodles onto a cutting board and sliced into strips with a pizza cutter.

Can the noodles be stored for another meal?

Yes, you can store your carnivore noodles for another meal, but there are a few things to keep in mind:
- Fridge storage: Place the noodles in an airtight container with parchment or wax paper between layers to prevent sticking. They’ll keep for about 2–3 days.
- Reheating: The texture is delicate, so it’s best to reheat gently in a pan over low heat or add them directly into a warm sauce or broth just before serving. Avoid microwaving too long or they may dry out.
- Freezing: Not recommended. Eggs, cream cheese, and pork rinds don’t freeze and thaw well — the noodles will likely get watery or crumbly.
If you plan to make them ahead, I’d suggest baking, cutting, and storing them flat, then finishing them with sauce or toppings right before eating.
