- Brown Sweetener: A sugar-free sweetener that adds sweetness without spiking blood sugar. I like to use this sweetener I buy from Amazon.
- Greek Yogurt: Adds moisture and a slight tang while helping to keep the muffins soft.
- Apple: Just 1 medium apple brings natural sweetness and a fresh, fruity flavor to the muffins.
- Cinnamon: Enhances the warm, comforting flavor of the apples.
- Chopped Pecans: Adds a satisfying crunch and texture to each bite.

Steps by step instructions
How to make low carb apple cinnamon muffins?
- Step 1: Combine dry ingredients.
- Step 2: Mix in wet ingredients.
STEP 1: Preheat your oven to 325°F. In a large bowl mix together the dry ingredients. (almond flour, cinnamon, baking powder, salt and brown sweetener)
STEP 2: Add in the wet ingredients and mix using a rubber spatula. (eggs, greek yogurt, melted butter and vanilla extract)
- Step 3: Mix in apples and pecans
- Step 4: Scoop into muffin pan and bake
STEP 3: Mix in a medium peeled and diced apple and then mix in the chopped pecans.
STEP 4: Use a large 2.5-tablespoon ice cream scoop to evenly portion the batter into 12 muffin liners in a muffin pan. Bake at 325°F for 30-35 minutes, or until the edges are golden and a toothpick inserted into the center comes out clean.
STEP 5: Allow them to slightly cool before transferring them to a cooling rack.
For the optional glaze simply mix a ¼ cup of powdered sweetener with 1-2 tablespoons of water or heavy cream. Add more until you reach your desired consistency.

- Fold in the diced apple and chopped pecans
- Scoop the batter into 12 muffin liners using a 2.5-tablespoon scoop. Bake for 30-35 minutes until golden and a toothpick comes out clean.
- Let the muffins cool slightly, then transfer to a cooling rack.
