    Savoury Keto Muffins

    Savoury Keto Muffins - Usually muffins can be a great way to get in a sweet fix but sometimes they can also be used to accompany a meal when you make these quick and easy savoury keto muffins. 

    As you know I am always looking at ways to hack recipes and make time in the kitchen effective and also low carb so us diabetics can enjoy great food.

    For these muffins I used some fresh herbs like dill and chives to make 2 different muffins.  First I made a Chive and Cheddar muffin and I then made a Dill and Goat Cheese muffin.

    To speed things up, I used Good Dee's muffin baking mix I purchased from Switch Grocery who sell innovative food products in Canada for the Paleo, Keto and Diabetic community.

    Quick and Easy Muffins

    So easy to make and I love Good Dee's mixes because the ingredients are clean and grain, sugar, gluten and soy free. 

    One package will make 12 muffins and be about 3 net carbs per muffin depending on how much savoury ingredients you use.  For this recipe we will make 6 Cheddar and Chive and 6 Dill and Goat Cheese muffins.

    ⏲️ Step by step instructions

    Step 1 - Empty the muffin mix into a large bowl and add the 3 eggs.  DO NOT add the coconut oil and vanilla as per the package directions.

    Step 2 - Add a ¼ teaspoon of Salt and a few dashes of black pepper and instead of the coconut oil use ⅓ cup of melted butter.  Mix the batter.

    Step 3 - separate the batter equally into two bowls.

    Step 4 - Add a handful of Chives and Cheddar to one bowl and then another handful of chopped dill and crumbled goat cheese to another bowl.  Mix well.

    Step 5 - Fill each muffin tin or mold to about half and then bake at 350 degrees for 18-20 minutes.

    Step 6 - Eat and enjoy 🙂
