Lately I have been all about getting my matcha on anyway I can, especially a nice and frothy matcha latte.

I've been experimenting with using matcha in many different recipes but recently I thought, why not Keto Matcha Lemon Glazed Muffins!

This recipe was so easy to make because I used a pre-mixed muffin mix from Good Dee's. In Canada I get my Good Dee's Muffin Mix from Switch Grocery.

All I did was add 1.5 tablespoons of green matcha (I Use This!) and swapped the oil with 3 tablespoons of Lee's Ghee Vanilla Bean 50/50 Blend that I get from Switch Grocery.

If you don't have ghee you can just use coconut oil as per the directions on the package.

    The Glaze

To make the glaze all I did was add the zest and juice of one lemon to a tablespoon of Swerve. I stirred it until it became a little thick and then drizzled it over the keto matcha muffins.
