Instructions
In a large bowl first whisk together all the ingredients except the chia seeds.
1.5 cups unsweetened almond milk, ½ cup pumpkin puree, 1 tablespoon lakanto maple flavored syrup, 1 teaspoon pumpkin pie spice, ¼ teaspoon all spice, ⅛ teaspoon salt
Gently add the chia seeds and continue to whisk until well combined. Use a rubber spatula to push down any chia seeds that may have formed on the side of the bowl.

Cover with plastic wrap and store in the fridge overnight. After 2 hours give it a stir just to incorporate any chia seeds that may have settled at the bottom of the bowl.
Serve in individual portions with a dollop of whipping cream and a sprinkle of pumpkin pie spice or cinnamon. (see video)
