Bake at 425°F for 30 minutes or until zucchini are soft and tender. Remove from oven when done.
½ cup raos tomato sauce, 1 teaspoon red pepper flakes, 1 teaspoon oregano, 1 garlic cloves
In a small bowl combine the tomato sauce with the red pepper flakes, oregano and minced garlic clove. Spoon the sauce mixture evenly into each zucchini boat.
Then top the boats with the mozzarella, cherry tomatoes and salami (if using)
½ cup shredded mozzarella, 8 cherry tomatoes, 2 oz genoa salami
