Add the strawberries, olive oil, mayonnaise, apple cider vinegar, dijon mustard, salt, and black pepper to a blender. Blend until smooth and creamy. Taste the dressing before adding stevia. If your strawberries are ripe and sweet, you may not need it. Add a few drops at a time until you reach your preferred sweetness.
Heat a dry pan over medium heat. Add the pumpkin seeds and toast for 2 to 3 minutes, stirring frequently, until golden and fragrant. Remove from heat and set aside to cool.
Wash and dry the romaine lettuce. Chop into bite-sized pieces and transfer to a large salad bowl or serving platter.
Top the romaine with the sliced cucumber, sliced red onion, and crumbled feta cheese.
Season with salt and black pepper directly over the salad.
Add the toasted pumpkin seeds and finish with the fresh sliced strawberries on top.
Spoon the strawberry dressing over the salad, toss to coat, and serve immediately.

Notes
For best results, dress the salad at the table, not in advance. The strawberry dressing also works great as a dip for fresh vegetables or drizzled over grilled chicken.
