Cauliflower Rice Layer
- 4 cups frozen cauliflower rice thawed
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 1 tablespoon italian seasoning
- 1 cup raos tomato sauce or your preferred low sugar tomato sauce
- ½ cup mozzarella shredded
Ground Beef Layer
- 1 tablespoon olive oil
- ½ medium onion diced
- 2 garlic cloves minced
- ½ red pepper diced
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 2 lbs ground beef
- 1 cup raos tomato sauce or your preferred low sugar tomato sauce. Add more if you like it saucy.

- 6 slices provolone cheese
- 1 cup mozzarella shredded
- 1 teaspoon oregano
- 20 slices pepperoni pork, beef or turkey pepperoni

Instructions
- Cook thawed cauliflower rice in a pan over medium heat until dry and slightly crispy. Stir in salt, black pepper, and Italian seasoning. - In another pan, heat olive oil and sauté onion, garlic, and red pepper with salt and black pepper until soft. Add ground beef and cook until browned. - Preheat oven to 375°F and grease a casserole dish with butter. Spread cauliflower rice mixture evenly in the dish and press it down.
