Low Carb Pizza Casserole (Gluten Free and Diabetic Friendly)
Low Carb Pizza Casserole is the perfect mix of pizza and lasagna—some even call it pizza lasagna! It features a cheesy cauliflower rice crust, a hearty layer of seasoned ground beef in a rich tomato sauce, and is topped with melty mozzarella and pepperoni slices. This diabetic-friendly, gluten-free comfort food is packed with flavor and easy to make for a satisfying meal.
Cook thawed cauliflower rice in a pan over medium heat until dry and slightly crispy. Stir in salt, black pepper, and Italian seasoning. Add tomato sauce and warm through, then mix in shredded mozzarella until melted.

In another pan, heat olive oil and sauté onion, garlic, and red pepper with salt and black pepper until soft. Add ground beef and cook until browned. Stir in tomato sauce and heat through.

Preheat oven to 375°F and grease a casserole dish with butter. Spread cauliflower rice mixture evenly in the dish and press it down.
Layer provolone slices over the cauliflower rice.

Top with shredded mozzarella, oregano, and pepperoni slices.
