13.5 oz (1 can) (do not use coconut milk)

unsweetened vanilla almond milk

egg yolks

vanilla extract

rum extract

freshly grated nutmeg
Instructions
Add the coconut cream and unsweetened almond milk to a small saucepan and place over low heat.
Whisk in the vanilla extract, cinnamon, freshly grated nutmeg, and rum extract, keeping the heat low.
In a separate bowl, whisk the egg yolks until smooth.
Slowly ladle 2 to 3 tablespoons of the warm coconut mixture into the egg yolks while whisking constantly to temper them.
Pour the tempered egg yolk mixture back into the saucepan while whisking.
Continue heating on low, whisking often, for 3 to 5 minutes until the mixture slightly thickens and coats the back of a spoon.
Remove from heat and let cool.
Transfer to a glass jar or airtight container and refrigerate.
Shake or stir well before using, as the creamer may thicken or separate slightly when chilled.
Add sweetener to taste in your coffee if desired.
