These Low Carb Apple Cinnamon Donuts are made with almond flour and no sugar added. Giving you a fluffy donut with a cinnamon and apple flavor you cannot resist.
Preheat your oven to 350°F. In a large bowl, add all the dry ingredients and whisk until everything is mixed together.
1 cup almond flour, ¼ cup low carb sweetener, ½ tablespoon cinnamon, 2 teaspoon baking powder, ½ teaspoon xanthan gum
Add the wet ingredients to the bowl and use a rubber spatula to mix until there are no dry spots.
4 large eggs, ¼ cup melted unsalted butter, 1 teaspoon vanilla extract, 1 medium grated apple
Peel and grate an apple, then gently fold it into the donut batter so the apple is spread evenly.
Transfer the batter to a piping bag or a freezer bag with a small corner cut off. Pipe the batter into a greased donut pan (you can use coconut oil, butter, or cooking spray). Smooth the tops of the donuts with a wet finger.
Bake the donuts for 16-18 minutes. Check if they’re done by inserting a toothpick – it should come out clean.
Let the donuts cool in the pan for 10 minutes. Use a small rubber spatula to carefully loosen and remove them from the pan. Transfer to a cooling rack.
Once cooled, brush the donuts with melted butter. In a bowl, mix the sweetener and cinnamon, then roll the donuts in the mixture until fully coated.
