Gluten Free High Protein Collagen Cookies (Sugar Free)
Gluten-free, high-protein collagen cookie, featuring a sugar-free chocolate dip and a sprinkle of sea salt for a perfect balance of flavors. This low-carb cookie is packed with nutrition, offering a guilt-free treat for any occasion.
2 cups almond flour, 1 cup powdered sweetener sugar substitute, ½ cup collagen protein powder, 2 tablespoon Cocoa Powder, 1 tablespoon espresso powder
Add the wet ingredients to the same bowl and mix with a rubber spatula until full combined.
2 large egg whites, ¼ cup 35% heavy cream
Using a cookie scoop, scoop out the cookie dough onto a parchmen- lined cookie sheet. Then freeze the cookies for 10 minutes. (see video)
While the cookies are in the freezer, preheat the oven to 350°F.
Bake cookies for 12-15 minutes or until the edges are set. Let cookies cool completely.
Chocolate Dip
Melt the sugar-free chocolate chips with the butter in the microwave in 30-second intervals, stirring until smooth. Dip cooled cookies halfway into the melted chocolate and place them on a wire rack. Sprinkle with flaked sea salt, if desired.
