This Air Fryer Low Carb Mozzarella Sticks recipe has a delicious double coated thick crust to ensure the cheese does not ooze out while air frying. It's a fool proof recipe that I have tried and tested several times.
Cut the mozzarella sticks lengthwise about one inch diameter then freeze for 1 hour
Beat 1 egg and place in a medium size dish, in another dish add the breadcrumbs
Remove mozzarella from freezer and first dip into the egg and then dredge through the breadcrumbs ensuring that all side are crusted, place on a wax or parchment lined dish and freeze for at least 1 hour
Remove from freezer and coat again with the egg and breadcrumbs and place once again in the freezer for at least 1 hour
Spray the air fryer basket with cooking spray and place the sticks into the basket, spray them with cooking spray. Air fry for 7-8 minutes or until golden brown. If over cooked the cheese may ooze out of the crust.
