Low Carb Reuben Pizza

Topped with tangy Russian dressing, melted Swiss cheese, sauerkraut, and canned corned beef, this pizza is a low carb and diabetic-friendly take on a classic sandwich.

Ingredients

Pizza Crust

  • 4 oz shredded mozzarella cheese
  • 4 oz shredded marble cheese
  • 2 large eggs
  • 1 teaspoon garlic powder
  • ¼ teaspoon caraway seed

Russian Dressing

Pizza Toppings

  • 1 cup shredded swiss cheese
  • ½ cup canned corned beef or fresh shredded corned beef
  • 2 tablespoon sauerkraut
  • Russian dressing

Instructions

Pizza Crust

  • Preheat oven to 350°F.
  • In a large mixing bowl combine together the pizza crust ingredients. Mix together with a rubber spatula until well combined.

  • Transfer the crust mixture onto a parchment-lined 10" pizza pan. Place another piece of parchment on top and use a tumbler or rolling pin to spread out the crust in the pan. Gently remove the top layer of parchment paper from the pizza crust.
  • Bake the pizza crust in the oven at 350°F for 15 minutes.
  • Remove the cooked pizza crust from the oven and place a layer of parchment paper on top and gently flip the pizza, then slide it back onto the pizza pan. Flipping it will allow us to cook the other side of the pizza once we add the toppings later.

Russian Dressing

  • In a medium-sized bowl combine the Russian dressing ingredients with a spoon until evenly mixed.
    ¼ cup mayonnaise, 1 tablespoon sugar free ketchup, 1 tablespoon finely diced white onion, ½ teaspoon horse radish, ½ teaspoon Worcestershire sauce, 1 teaspoon hot sauce, ⅛ teaspoon sweet paprika powder

Pizza Toppings

  • Top the pizza by spreading the Russian dressing all over the top of the pizza then top it with the corned beef, sauerkraut and Swiss cheese.

  • Place the pizza back in the oven and bake at 350°F for 15 minutes once again and then Broil for 3-5 minutes until the toppings are nice and bubbly.
  • Remove the pizza from the oven and allow it to slightly cool before cutting it into slices and serving. Garnish with chopped parsley (optional)

Notes

Recipe Tips:
  • To prevent the crust from getting soggy, make sure to thoroughly pat the sauerkraut dry with paper towels before adding it to the pizza.
  • For added flavor and texture, consider topping the pizza with some sliced pickles or additional caraway seeds before baking.
