In a small bowl, whisk two egg yolks; temper with two tablespoons of the ice cream mixture, then whisk into the main mixture. Continue to whisk over low heat for 5 minutes.

Allow the mixture to cool, then pour into the Ninja Creami pint and freeze for 24 hours with the lid on.
After 24 hours, run the sugar-free eggnog ice cream in the Ninja Creami machine using the smoothie or lite ice function. Enjoy!
