A fresh and flavorful Low Carb Strawberry Caprese Salad made with juicy strawberries, mozzarella, crisp lettuce, and basil, all tossed in a simple homemade balsamic dressing. Light, refreshing, and perfect for summer.
Add olive oil, balsamic vinegar, Dijon mustard, minced garlic, salt, and pepper to a mason jar. Seal and shake well until fully combined. Set aside.
Salad
Wash, dry, and chop the lettuce. Place it in a large serving bowl or platter.
Hull and slice the strawberries. Add them to the bowl with the lettuce.
Slice the mozzarella or bocconcini if needed, and add to the salad.
Finely chop the fresh basil and sprinkle it over the salad. Lightly season with a pinch of salt and pepper.
Shake the dressing again, drizzle over the salad just before serving, and gently toss to combine. Serve immediately.
