Low Carb Crockpot Peanut Clusters
These Low Carb Crockpot Peanut Clusters are a set-it-and-forget-it recipe that actually behaves. Everything melts slowly in the crockpot, the texture stays smooth, and the chocolate does not scorch. You dump, stir once, then scoop.

Instructions
Add all ingredients to the crockpot and set on low for 1 hour, making sure to place the lid on.
Halfway through, stir the mixture and put the lid back on to continue cooking.
Line a tray with muffin liners.
Scoop about a tablespoon of the mixture into each liner.
Top with low carb sprinkles if desired.
Place in the fridge for about 1 hour to set.
Notes
Stir thoroughly halfway through cooking to avoid seizing or uneven clusters.
Clusters set firmer in the fridge; let sit at room temperature a few minutes before serving if too hard.
Optional espresso powder enhances chocolate depth without tasting like coffee.
Low carb sprinkles or toppings are optional and can add festive flair.
