Low Carb Caprese Bites are made with fresh mozzarella, cherry tomatoes, and basil. Ideal for gatherings or a light snack. A low-carb twist on the classic Caprese.
In a medium bowl whisk together the white wine vinegar, olive oil, salt, black pepper, and dry oregano. Add the bocconcini. Marinate for 30 minutes.
Thread the marinated bocconcini, cherry tomatoes, fresh basil and another bocconcini onto skewers. You may also want to change it up and use two cherry tomatoes and one bocconcini per bite.
Arrange on a platter, just before serving, drizzle with balsamic vinegar. (see video)
