- 2 cups broccoli florets
- ½ head cauliflower cut into florets
- 1 teaspoon salt to salt the boiling water
- ¼ cup unsalted butter
- ¼ cup Heavy Whipping Cream 35%
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 tablespoon chopped fresh chives more for garnish
- ¼ cup chopped fresh dill more for garnish
- ¼ cup chopped fresh parsley
- ½ cup grated parmesan more for garnish
Instructions
- Start by boiling the broccoli and cauliflower florets in salted water until they are tender. Then, strain the cooked vegetables and set them aside.2 cups broccoli florets, ½ head cauliflower, 1 tsp salt
- Using a potato masher or fork, mash the boiled broccoli and cauliflower until you achieve your desired consistency.
- Once mashed, add the remaining ingredients such as unsalted butter, heavy whipping cream, salt, black pepper, and grated Parmesan cheese. If the mashed broccoli and cauliflower is too thick, you can add a splash of vegetable broth, dairy-free milk, or water to thin it out. If it's too thin, you can simmer it on the stovetop to evaporate excess moisture, or add more cooked vegetables to thicken it.
