A viral tik tok recipe, Baked Goat Cheese Pasta is made with fresh cherry tomatoes baked with goat cheese and mixed with a low carb pasta, pesto and fresh basil. Vegetarian, diabetic friendly and low carb recipe everyone will love.
Nestle the 2 goat cheese logs in between the tomatoes on each side. See above phots.
8 oz goat cheese
Place the casserold dish in the oven and bake at 425°F for 25 minutes.
While the casserole is in the oven, cook the pasta according to the instructions on the packagin. Save a ¼ up of the pasta water.
2 cups low carb pasta (uncooked)
Remove from oven after 25 minutes and stir the goat cheese with the tomatoes to create a sauce.
Add the remaining ingredients and stir to combine. Garnish with more fresh basil leaves. (See video)

Notes
Top Tip: make sure you use pasta that will stay firm after you cook it. Otherwise, it may break down while you mix it with the sauce. Some low-carb pasta might be too soft after cooking.
