Low Carb Air Fryer Artichokes
These delicious Low Carb Air Fryer Artichokes are easily made in the air fryer and served with a dairy free creamy Lime Aioli dipping sauce.

- 2 large artichokes
- 2 tablespoon olive oil
- ⅛ teaspoon salt
- ⅛ teaspoon black pepper
- Lime Aioli Sauce (see recipe notes)
Preheat air fryer to 350°F
Clean and trim artichokes (see video)
Cut in half and remove inner hairy choke, brush with a lemon wedge to keep them from browning.
Brush with olive oil and sprinkle with salt and pepper
Place cut side down in the air fryer
Air Fry at 350 for 10-12 minutes

Lime Aioli Dipping Sauce - in a blender add ½ cup mayo, 2 garlic cloves, 2 tablespoon lime juice, dash of salt and pepper. Blend until smooth and creamy.
Oven Method - Bake uncovered at 400 F for 15 minutes. Then remove and cover with tin foil, and bake for another 20-30 minutes, or until the artichokes are tender and the leaves pull off easily.
