Equipment

  • double boiler if making chocolate rim

Ingredients

For the Mint Smoothie

  • ½ cup unsweetened coconut milk cream from a can
  • ½ cup unsweetened almond milk
  • 1 tablespoon coconut oil
  • ½ teaspoon pure mint extract peppermint extract
  • 1 leaves mint
  • 1 tablespoon Philosopie Cacao Magic Superfood Protein (chocolate protein powder)
  • 1 teaspoon chia seeds
  • 10 drops liquid stevia (can use other powdered sweeteners if preffered)

For the Chocolate Rimmed Glass (optional)

  • 1.25 oz low carb mini chocolate chips
  • 2 tablespoon heavy cream

Instructions

For the Mint Smoothie

  • Place coconut milk in the fridge 2 hours before making this recipe
  • Remove coconut milk from fridge, coconut cream will have formed at the top of the can
  • Use a spoon to scoop out the cream and place into blender
  • Add remaining smoothie ingredients in a blender
  • Blend for about 30-60 seconds
  • Once blended pour into glass.
  • If using chocolate rim, rim the glass before pouring in the smoothie.

For the Chocolate Rimmed Glass

  • Over a double boiler melt the chocolate
  • Add Heavy Cream and stir until well combined
  • Pour mixture into a narrow/deep bowl or dish that will allow your glass to fit
  • Dip your glass into the chocolate filled bowl to rim the glass
