Instructions

  • Preheat air fryer at 400°F and peel and slice 6 hard boiled eggs in half, gently removing the yolks and placing them into a medium sized bowl.
  • Bread the eggs by first dredging in almond flour, then the whisked egg and then into the low carb bread or pork rind crumbs (add a dash of salt and pepper to the crumbs)
  • Spray air fryer basket with cooking spray and place each egg into the basket, spray the eggs with cooking spray. You may need to do this in batches if they don't fit. Air fry at 400 °F for 6 minutes.
  • Make the yolk filling by mashing the yolks with the mayo, dijon mustard, hot sauce and salt and pepper. Place yolk mixture into a piping bag with a star tip. If you don't have a piping bag you can use a spoon to fill the eggs.
  • Remove eggs from air fryer basket and fill each egg with the yolk mixture. You can do this with piping bag or spoon them in to fill the egg.
  • Top each egg with a sprinkle of paprika and chives. Serve immediately.

  • Hard boiled eggs: for an easy method to hard boil the eggs you can also air fryer them for about 16 minutes at 250°F. Remove from air fryer and place in an ice bath for easier peeling. If making them on the stove top, please see this method.
  • Make in advance: I suggest enjoying these eggs immediately out of the air fryer as the breading can become soft if left in the fridge for over 2 hours. However, you can hard boil the eggs, make the yolk mixture in advance and keep them seperate wrapped in air tight containers until you are ready to breed them and place in the air fryer.
  • Variations: you can add different ingredients to the yolk mixture such as feta or blue cheese, pesto, diced jalapenos, wasabi. Use your imagination and get creative in the kitchen.
