Ingredients

  • ½ lb ground pork
  • ½ lb ground beef
  • ½ lb ground veal
  • 1 cup pork rind crumbs see alternatives
  • ½ cup chopped fresh parsley
  • 2 cloves garlic minced
  • ½ cup grated parmesan
  • 1 large egg
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil for frying

Instructions

  • In a large bowl, combine the ground meat, breadcrumbs, Parmesan cheese, eggs, minced garlic, chopped parsley, salt, and pepper.
    ½ lb ground pork, ½ lb ground beef, ½ lb ground veal, 1 cup pork rind crumbs, ½ cup chopped fresh parsley, 2 cloves garlic, ½ cup grated parmesan, 1 large egg, ½ teaspoon salt, ½ teaspoon black pepper
  • Mix the ingredients together until well-combined, but be careful not to overmix as this can make the meatballs tough.
  • Using your hands, form the mixture into small meatballs, about 1-2 inches in diameter.
  • Heat the oil in a frying pan over medium heat until it's hot but not smoking.

  • Add the meatballs to the pan and cook for about 5-7 minutes, turning occasionally, until they are browned and crispy on the outside and cooked through on the inside.
  • Remove the meatballs from the pan and place them on a paper towel-lined plate to absorb any excess oil.
  • Serve the meatballs hot, either on their own or with a dipping sauce, such as marinara or sugar free ketchup. (See video)
