A viral tik tok recipe, Baked Goat Cheese Pasta is made with fresh cherry tomatoes baked with goat cheese and mixed with a low carb pasta, pesto and fresh basil. Vegetarian, diabetic friendly and low carb recipe everyone will love.

Ingredients

  • 2 tablespoon olive oil
  • 3 cups cherry tomatoes
  • 3 sliced garlic cloves
  • 1 teaspoon dry oregano
  • teaspoon salt
  • teaspoon black pepper
  • teaspoon red pepper flakes optional
  • 8 oz goat cheese divided into 2 logs
  • 2 cups low carb pasta (uncooked) see above for suggestions
  • ¼ cup pasta water saved after boiling the pasta
  • 3 tablespoon basil pesto store bought
  • 6 basil leaves

Instructions

  • Preheat the oven to 425°F
  • To a casserole dish add the olive oil, cherry tomatoes, sliced garlic cloves, oregano, salt, pepper and red pepper flakes (optional). Mix through.
    2 tablespoon olive oil, 3 cups cherry tomatoes, 3 sliced garlic cloves, 1 teaspoon dry oregano, ⅛ teaspoon salt, ⅛ teaspoon black pepper, ⅛ teaspoon red pepper flakes
  • Nestle the 2 goat cheese logs in between the tomatoes on each side. See above phots.

  • Place the casserold dish in the oven and bake at 425°F for 25 minutes.
  • While the casserole is in the oven, cook the pasta according to the instructions on the packagin. Save a ¼ up of the pasta water.
    2 cups low carb pasta (uncooked)
  • Remove from oven after 25 minutes and stir the goat cheese with the tomatoes to create a sauce.
  • Add the remaining ingredients and stir to combine. Garnish with more fresh basil leaves. (See video)

Notes

Top Tip: make sure you use pasta that will stay firm after you cook it. Otherwise, it may break down while you mix it with the sauce. Some low-carb pasta might be too soft after cooking.
