Using a medium sized mixing bowl and a rubber spatula mix together the almond flour, xanthan gum, garlic powder and salt.

While mixing, slowly add 1 tablespoon of warm water at a time until it gets to a doughy consistency. I used 5 ½ tablespoons of water to get it to a almost tough doughy sticky texture.

Knead the dough for about 1 minute. Then place the ball of dough between two pieces of parchment paper and roll it out to about a ¼ centimeter in thickness.  Preheat your Air Fryer to 400°F. Cut the rolled-out dough into strips.

Once the air fryer is preheated spray the basket with cooking spray and then lay out the strips in batches.  Lightly spray the strips in the basket with cooking spray and Air Fry at 400°F for 5 minutes.

Fries will be golden brown and ready for serving.

Transfer fries to a plate and sprinkle with salt (if needed), parsley and freshly grated parmesan cheese. If you fancy, serve with a side of sugar free ketchup.
