How to make the low carb swiss chicken casserole recipe?
- Step 1: Whisk together the cream of chicken sauce
- Step 2: Pour the sauce of shredded chicken
STEP 1:
In a medium-sized saucepan over medium heat, make the cream of chicken sauce by adding the cream cheese, chicken broth, onion powder, garlic powder, salt, pepper, and optional celery seed. Whisk until smooth and creamy.
STEP 2: Preheat the oven to 375°F. Grease a 9 x 13-inch casserole dish with butter, then place the shredded or chopped cooked chicken (I used a rotisserie chicken) evenly in the bottom. Pour the homemade cream of chicken sauce over the chicken.
- Step 3: Top with a layer of swiss cheese slices
- Step 4: Top with parmesan pork rind crumbs and bake.
STEP 3: Add a layer of Swiss cheese slices on top of the chicken and sauce.
STEP 4: In a medium bowl, combine the grated parmesan and pork rind crumbs with the melted butter. Sprinkle the mixture over the Swiss cheese slices, then bake at 375°F for 30 minutes, or until the top is crispy, golden brown, and bubbly.

- 6 slices swiss cheese

- 2 cups pork rind crumbs
- 1 cup grated parmesan
- ¼ cup melted butter
Instructions
- In a medium-sized saucepan over medium heat, add the cream cheese, chicken broth, onion powder, garlic powder, salt, pepper, and optional celery seed. This recipe didn't work so well for me when I reduced the ingredients by half since I only wanted 4 servings instead of 8 servings. Even I followed the instructions carefully and I reduced the cook time to allow for the smaller amount, the sauce swamped the parmesan topping. Also, rather than use chicken soup (as was suggested in the recipe tips) I made the "homemade" sauce using cream cheese, broth and seasonings, but I found the sauce lacked something in taste. However, this was a really easy, diabetic friendly recipe, so I might be tempted to try making it again but use sauted onion instead of onion powder to see if that gives it more flavour.

Thanks for trying this! If you only used parmesan and skipped the pork rinds, that may be why the sauce swamped the topping—they help soak up moisture and crisp up. Sautéed onion sounds like a great idea for more flavor!
