Ever since I had my dash mini waffle maker I have become a waffle wizard in the kitchen. I mean I even make waffles out of only using halloumi cheese. I can't tell you some of the strange ingredients I have tried to make in the waffle iron. These waffles would also go well with this High Protein Omelette recipe.

My goal for these keto cauliflower waffles was to make them extra crispy but use healthy low carb ingredients like cauliflower and almond flour.
🥘 Main ingredients to make these hashbrown waffles
I used 3 different types of cheese, cauliflower, a little almond flour and bacon crumbles to make these delicious low carb hash brown waffles.
- Cauliflower: riced cauliflower was used and pan fried to remove any moisture before adding them to the waffle mixture
- Almond Flour: just a small amount was used to give the waffles a little more structure
- Cheese: a blend of cheddar, mozzarella and dubliner cheese were used but you can swap any other cheese you prefer
- Bacon Crumble: giving these waffles a smokey and salty flavour, bacon simply takes it to another level

How to make Cheesy Cauliflower Hash brown Waffles
First want to rice some cauliflower in a food processor. Alternatively you can use raw or frozen prepackaged cauliflower rice. Add the cauliflower rice to a dry frying pan on medium heat and stir occasionally. Cook until it becomes dry, a little browned and crispy.
Next plug in the waffle iron and get it nice and hot. My waffle iron only has one setting. Toss the cauliflower rice in a bowl with the cheese, bacon crumbles, almond flour, salt, pepper and melted butter. Mix together until well combined. Spray the waffle iron with cooking spray and then scoop about a half cup of the mixture into your hands and form into a patty. Then place on the waffle iron and close the lid tight. I used a weight on top of the waffle iron to keep it closed tightly.
The waffles should only take about 2-3 minutes to cook. Although if you are using a large waffle iron it may take longer. These waffles will require that you use a fork to peel it from the bottom. Gently remove them and transfer to a cooling rack. (see video how I did this). Enjoy the hash brown waffles with a dollop of sour cream and a sliced green onion or jalapeno.

Top Tip: place your waffle iron on top of a plate to avoid a mess on your countertop. Due to the butter and bacon these hash brown waffles will be a bit messy while cooking and some grease may spill over.
I had to loosen the cauliflower waffle from the waffle iron gently with a fork in order to release them. They may turn out a little odd shaped but these are hash browns afterall.
- Serving: enjoy these cheesy cauliflower hash brown waffles with a dollop of sour cream on top with a sliver of green onion. I used a sliver of a jalapeno pepper and kicked it up a notch.
- Storage: these hash brown waffles are super crispy and will hold up in an airtight container in the fridge for up to 3 days.
- Frozen: place the cauliflower waffles in an airtight container and freeze them up to 1 month to save for later. Simply remove when ready to consume and allow to that on the counter top and room temperature. Warm up briefly in the microwave.
♨️ Recipe Variations
Like I said earlier I have been know to throw everything in the waffle iron. To keep these cheesy waffles true to form with a slight variation you swap with these:
- Cheese - use a cheese that will melt but that will not turn into a goopy mess, otherwise the the waffles may not firm up. Cheese like gruyere, aged cheddar and parmesan will be tasty.
- Meatless - omit the bacon and make it a vegetarian waffle.
- Spicy - add a tablespoon of hot sauce to the mixture to make it a spicy waffle

Due to the amount of fat in these waffles you should avoid warming them up in the toaster to avoid any fire hazards.
If your waffle iron has a non stick surface, you do not need to use cooking spray. However, if your waffle iron is older and it lost its non stick surface like mine did, you may need to use cooking spray or brush it with melted butter.
Each waffles contains roughly 2g net carbs and therefore can be considered low carb. They should also fit into a keto diet and are diabetic friendly.

Cheesy Cauliflower Hash Brown Waffles
Ingredients
- 2 cups riced cauliflower
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- ½ cup shredded dubliner cheese
- 2 tablespoon melted butter
- ¼ cup almond flour
- ¼ cup bacon crumbles
- ⅛ teaspoon salt
- ⅛ teaspoon black pepper
Instructions
- Rice the cauliflower or use fresh or frozen prepackaged cauliflower rice.
- Place riced cauliflower in a medium sized frying pan on the stove on medium heat. Stir occasionally. Cook until all the moisture is released and the cauliflower is dry, slightly browned and a little crispy.
- Transfer cooled cauliflower rice to a large bowl and add the remaining ingredients. Mix until well combined.
- Plug in the waffle iron and once it is hot spray with cooking spray if needed. Scoop out about half cup of the waffle mixture into your hands and shape into a patty. Place in waffle iron and close the lid. Press down on the top of the lid with a heavy non-flammable object to keep the lid on snug. I used a heavy ceramic bowl.
- After 2 minutes check the waffle to see if it's golden and crispy, you may need a minute or two longer, depending on your waffle iron.
- Remove waffle with a fork, be gentle as it may take some maneuvering to loosen it up from the iron. Transfer to a cooling rack.
- Once slightly cooled, serve with a dollop of sour cream on top and a sliver of green onion or jalapeno. (Refer to the detailed video instructions below if further clarification is needed)
