This low carb roasted brussel sprouts recipe is a favorite around October and November when the temperatures get a little cooler and I want a comforting dish. The creamy crumbled blue cheese adds a depth of flavor that I simply love and cannot do without. However, if blue cheese is not your thing you can leave it out.
As I was making my Bacon Wrapped Maple Air Fryer Brussel Sprouts I thought of making this recipe as well. I love brussel sprouts and crispy bacon and adding the walnuts and blue cheese just seemed like a natural to me. Keeping it low carb with only 3g net carbs per serving.

Roasted brussel sprouts have been a favorite of mine but you would have never caught me eating these as a kid. Roasting with some extra virgin olive oil is the only way to get them a little crispy and still tender and soft.

- Blue cheese: a pungent cheese with little spicy notes and a slightly salty taste
- Bacon: for those sweet, salty and umami flavors you just can't get from any other food
- Walnuts: adding a sweet and nutty taste to this already delicious recipe
- Extra Virgin Olive Oil: subtle notes of fresh herbs, fruit and a slight pepperiness

How to make Blue Cheese Brussel Sprouts with Walnuts and Bacon?
STEP 1: First trim and wash 1 lb of brussel sprouts and then shave them in the food processor or use a sharp knife to cut them into thin slices.
STEP 2: Spread the brussel sprouts out onto a baking sheet. I used an old sheet pan because I want the brussels to get a little charred and crispy. I also do not use parchment paper for this recipe as I find it does not crisp up the sprouts and bacon as much as I would like. Drizzle the brussel sprouts with olive oil.
STEP 3: Cut 4 slices of bacon into 1" pieces and spread them over the brussel sprouts. Sprinkle the chopped walnuts and blue cheese crumbles over the brussel sprouts and sprinkle with salt and pepper. Using your hands mix everything in the pan until well combined.
- STEP 4: Bake in a preheated 400°F oven for 30 minutes, toss half way through. Enjoy as a side dish or simply in a bowl comfortably curled under a blanket near the fire.

This roasted brussel sprouts recipe is delicious as is, however, I will share some top tips and variations that can heighten the flavors of this dish.
Top Tip: char the brussel sprouts and bacon by using an older sheet pan that you don't mind getting banged up a little. Using parchment paper will not give the same crispy feel to this recipe.
- Serving: these low carb brussel sprouts make a perfect side dish to my Keto Crispy Chicken Thighs
- Storage: if you have leftovers you can store in an airtight container in the fridge for up to 3 days.
- Make ahead: do so no more than one to two days in advance, and store the shaved uncooked brussel sprouts in an airtight container in the refrigerator.
- Air Fryer: this keto recipe can be made in the air fryer but depending on the size you wouldn't get as much and may need to do it in batches. I find the air fryer can often crisp up the brussel sprout leaves too much for my linking and needs to be watched very closely.
- Cheese - parmesan cheese brussels sprouts are out of this world, simply sprinkle some freshly grated parm as soon as you take them out of the oven.
- Colour - add a touch of color with some cubed butternut squash mixed in with the sprouts.
- Vegetarian - omit the bacon and make this recipe vegetarian

If you are not a fan of blue cheese you can use other creamy cheeses like gorgonzola, feta or stilton cheese.
Either is fine although larger brussel sprouts will be a little more bitter and smaller ones will be sweeter.

- 1 lb brussel sprouts sliced thin
- 4 slices bacon
- ½ cup chopped walnuts
- ½ teaspoon salt

Instructions
- Preheat oven to 400°F
- Wash and trim the brussel sprouts and then slice them thinly with a sharp knife or use a food processor with the slicing blade.
- Spread brussel sprouts evenly onto a sheet pan and then top with the sliced bacon, crumbled blue cheese, walnuts and salt and pepper. Toss and combine with your hands.
